Learn How to Check Eggs for Freshness and Quality
Understanding Egg Freshness: What the Dates and Labels Mean
When you buy eggs at the grocery store, you'll notice several dates printed on the carton. Understanding what these dates actually mean is the first step in checking for freshness. The "sell by" date indicates the last day a store should display eggs for sale, though eggs remain fresh well beyond this date when stored properly at home. The "pack date" shows when the eggs were washed, graded, and placed in the carton. This number appears as a three-digit code from 001 to 365, representing the day of the year. For example, code 032 means the eggs were packed on February 1st. Eggs can be stored in your refrigerator for three to five weeks from the pack date, so knowing this number helps you calculate roughly how long you have to use them.

The USDA grades eggs on a scale of AA, A, or B based on shell cleanliness and interior quality. Grade AA eggs have the thickest white and smallest air cell, making them ideal for frying or poaching where appearance matters. Grade A eggs work well for scrambling, baking, or cooking where appearance is less critical. Grade B eggs have thinner whites and larger air cells but still taste fine for cooking. Specialty labels like "free-range," "cage-free," "pasture-raised," and "organic" describe how hens were raised, not the freshness of the eggs themselves. Brown eggs versus white eggs have no quality difference—the color depends on the hen breed and doesn't affect freshness or nutrition.
Practical Takeaway: When shopping, check the pack date first. A pack date within the past week or two indicates fresher eggs, though eggs packed several weeks ago can still be perfectly fresh if stored correctly.
The Water Glass Test and Float Test for Freshness
One of the oldest and most reliable methods for checking egg freshness is the water glass test. Fill a glass or bowl with cool water and gently place an egg in the water. A fresh egg will sink to the bottom and lay flat on its side. As an egg ages, the air cell inside gradually grows larger as moisture evaporates through the porous shell. An egg that is still fresh to moderately fresh will sink but stand upright on one end. An older egg will float near the surface or bob in the middle of the water. An egg that floats to the top should not be eaten, as this indicates the air cell has expanded significantly and the egg may be spoiled.

This test works because of basic physics. A fresh egg contains very little air space relative to its total volume, so it's denser than water and sinks. Over time, as the egg ages and water inside evaporates, the air cell grows and reduces the overall density. When the air cell becomes large enough, the egg becomes less dense than water and floats. This test is particularly useful for eggs you've had in your refrigerator for a while and want to verify before cooking. You can test multiple eggs at once by filling a larger bowl with water and checking each egg. The beauty of this method is that it requires no special equipment—just a glass and water.
The float test isn't foolproof for every situation. Eggs with cracked shells may sink even if they're old, because the interior contents may have leaked out or air may have entered unevenly. However, you should never eat an egg with a cracked shell anyway, since bacteria can enter through the break. Additionally, some very fresh eggs from certain chicken breeds may have slightly different air cell sizes than average, though this is rare in commercially graded eggs.
Practical Takeaway: Keep this test in mind for eggs stored in your fridge for more than two weeks. A quick water test takes 30 seconds and gives you reliable information about whether an egg is safe to cook.
Visual Inspection: What to Look for in the Shell and Candling
Before cooking any egg, examine the shell carefully for signs of damage or contamination. Look for cracks, dents, or breaks in the shell. Even small cracks can allow bacteria to enter the egg. Avoid eggs with visible dirt, manure, or other debris on the shell. While eggs naturally come from hens and may have some dirt, commercially sold eggs are washed and should be relatively clean. If an egg's shell feels rough, slimy, or unusually warm, don't use it. The shell should feel smooth and dry under normal refrigerator temperatures.

Candling is an inspection method that involves shining a bright light through the egg to see inside. Grocery stores use mechanical candling equipment to grade eggs, but you can do a basic version at home. In a dark room, hold an egg up to a bright light source such as a flashlight or lamp. A fresh egg's contents will appear relatively dense and opaque, with a small air cell at the large end. As an egg ages, you may see the air cell grow larger. The yolk should remain centered and not move excessively when you gently rotate the egg. If you see blood spots or meat spots inside, you can still eat the egg—these result from blood vessel ruptures during formation and don't indicate spoilage—but some people prefer to remove them before cooking. If the contents look cloudy, murky, or have an unusual appearance, the egg may be spoiled.
When looking at the shell itself, color variations don't matter. Brown eggs, white eggs, speckled eggs, and pale blue eggs are all normal and indicate only the breed of chicken. However, some staining or discoloration on the shell might indicate bacterial growth or mold, which could mean the egg wasn't stored properly. Pink or greenish stains are particularly concerning and suggest bacterial contamination.
Practical Takeaway: Make visual inspection your first line of defense. Spending 10 seconds looking at each egg before it goes into your cooking can prevent using spoiled eggs that might cause illness.
The Smell and Sound Tests: Additional Freshness Indicators
Your nose is one of your most reliable tools for detecting spoiled eggs. A fresh egg has virtually no smell when raw. If you crack an egg into a bowl or pan and notice a sulfur-like or rotten smell, do not eat it—discard it immediately. An older egg may have a slightly stronger smell when you crack it open, but it shouldn't smell unpleasant or offensive. Some people notice a faint sulfur smell when cooking eggs, which is normal and comes from compounds in the egg whites; this is different from the sharp, unpleasant odor of a spoiled egg. If you're uncertain, err on the side of caution. Trust your sense of smell—it evolved to protect you from foodborne illness.

The sound test, while less scientific, can provide quick feedback. Gently shake a raw egg near your ear in a quiet environment. A fresh egg should make no sound or only a very faint sound. An older egg may slosh slightly inside the shell as the white becomes thinner and more watery. While this doesn't mean the egg is unsafe, it indicates the egg is no longer as fresh. This test becomes more noticeable with very old eggs. Some people also describe listening to the shell itself—a tapping sound might indicate an air pocket, suggesting an older egg, though this requires practice to interpret correctly.
Once you crack an egg open, you can also assess the yolk visually. A fresh yolk should be round and firmly formed, sitting high in the center of the white. As an egg ages, the yolk flattens and spreads more easily when cracked, and the white becomes clearer and runnier rather than thick and opaque. The white of a fresh egg should have two distinct layers: a thick, gel-like layer close to the yolk and a thinner, more watery outer layer. These physical characteristics matter most if you're frying or poaching eggs where appearance is important. For baking or scrambling, the age of the yolk and white matters less.
Practical Takeaway: Before cooking, crack your egg into a separate bowl first rather than directly into your pan. This gives you a moment to inspect it and smell it, preventing a spoiled egg from ruining an entire meal.
Storage Conditions and How They Affect Egg Quality
How you store eggs directly impacts how long they stay fresh. Eggs should be kept in the main section of your refrigerator at a consistent temperature between 35 and 40 degrees Fahrenheit, not in the door where temperatures fluctuate each time you open the refrigerator. Storing eggs in their original carton protects them from
