Learn How to Make Cheesecake From Scratch

Understanding Cheesecake Basics and Ingredients

Cheesecake is a dessert made from a combination of cream cheese, sugar, eggs, and various flavorings, typically baked on top of a crust. Unlike many other cakes, cheesecake has a dense, smooth texture that comes from its primary ingredient: cream cheese. The dessert originated in ancient Greece, where cheese was combined with honey and wheat, but the modern American version using cream cheese became popular in the 1870s after cream cheese was invented in New York.

To make cheesecake from scratch, you'll need several key ingredients. Cream cheese forms the foundation—typically 16 to 32 ounces depending on your recipe and desired richness. Full-fat cream cheese works best for texture and flavor. You'll also need sugar (usually granulated), eggs (typically 3 to 4 large eggs), and vanilla extract. For the crust, gather graham cracker crumbs, melted butter, and a small amount of sugar. Additional ingredients might include sour cream for tanginess, lemon juice for brightness, or salt to enhance flavors.

The quality of your ingredients affects the final result. Room temperature cream cheese blends more smoothly into the filling, reducing lumps. Eggs at room temperature incorporate more evenly into the batter. Using real vanilla extract rather than imitation provides better flavor. When selecting graham crackers for the crust, regular honey-flavored varieties work well, though chocolate or cinnamon options offer flavor variations.

Most traditional cheesecake recipes yield 12 to 16 servings from a 9-inch springform pan. The ingredient proportions matter significantly—too little cream cheese creates a cake-like texture rather than the characteristic creamy consistency. Too many eggs can make the cheesecake rubbery. Understanding these basic components helps you recognize why certain steps matter during preparation and baking.

Practical Takeaway: Before starting, read your entire recipe and gather all ingredients at room temperature. This preparation step, called mise en place by chefs, prevents mistakes and ensures smooth blending of ingredients during mixing.

Preparing Your Crust and Pan Setup

The crust provides structural support and adds texture contrast to creamy cheesecake filling. A proper crust should be firm enough to hold the filling but not so hard that it becomes difficult to eat. Most home bakers prepare a simple graham cracker crust, which requires just three ingredients: graham cracker crumbs, melted butter, and a tablespoon or two of sugar.

To prepare the crust, crush about 1.5 cups of graham crackers into fine crumbs—you want particles similar in size to sand. Many people place crackers in a food processor for even consistency, though a sealed bag and rolling pin works equally well. Mix the crumbs with 4 to 5 tablespoons of melted butter and 2 tablespoons of sugar. The mixture should resemble wet sand and hold together when squeezed. Press this mixture firmly into the bottom of your springform pan, using the flat bottom of a measuring cup to create an even layer. Some bakers press the mixture slightly up the sides to create a partial wall, though this is optional.

Pan preparation is crucial for cheesecake success. Use a 9-inch springform pan—this allows easy removal without cutting. Before adding the crust, wrap the outside of the pan with heavy-duty aluminum foil, covering the bottom and sides. This prevents water from the water bath (explained in later sections) from seeping into your cheesecake. Some bakers double-wrap or use two layers of foil for extra protection. This step requires only a few minutes but prevents soggy crusts and cracked tops.

After pressing the crust into place, many recipes call for pre-baking it at 325°F for about 8 to 10 minutes. This step dries out the crust and helps it maintain its firm texture when the wet filling is added. However, some recipes skip this step with acceptable results. If you choose to pre-bake, remove the crust from the oven and let it cool slightly before adding your filling.

Practical Takeaway: Wrap your springform pan carefully with foil before adding the crust. This single step prevents water from ruining your cheesecake during the water bath baking process and is worth the few minutes of preparation time.

Mixing the Cheesecake Filling Properly

Creating a smooth, lump-free filling requires attention to mixing technique and ingredient temperature. Begin by allowing your cream cheese to sit at room temperature for 30 to 60 minutes before mixing. Cold cream cheese doesn't blend smoothly and often results in lumps throughout your finished cheesecake. You can soften it faster by cutting the block into smaller cubes.

Using an electric mixer on low to medium speed, beat the cream cheese for 1 to 2 minutes until it becomes creamy and smooth. Scrape down the bowl and beaters frequently—lumps can hide on the sides of the bowl. This initial beating stage is critical; rushing through it or using high speed can incorporate too much air, leading to cracks in your finished cheesecake. Once the cream cheese is smooth, add sugar gradually and beat for another minute or two, again scraping the bowl frequently.

Add eggs one at a time, beating on low speed after each addition and allowing each egg to fully incorporate before adding the next. This prevents overmixing, which can cause the filling to become too airy. If your recipe includes sour cream, vanilla extract, or other flavorings, add these after the eggs are incorporated. Mix just until combined—overworking the batter at this stage introduces air bubbles that expand during baking and cause cracks.

Pour the filling into your prepared crust, smoothing the top with a spatula. The batter should be relatively smooth and pourable but thick. If you're making a flavored cheesecake (such as chocolate or strawberry), fold in mix-ins gently after all other ingredients are combined. This gentle folding motion, done with a spatula, incorporates flavorings without creating excess air bubbles.

Practical Takeaway: Mix slowly and deliberately, stopping frequently to scrape the bowl. Smooth, lump-free cheesecake filling comes from patient mixing technique rather than speed or high mixer settings. Quality matters more than efficiency at this stage.

Baking with a Water Bath and Temperature Control

The water bath, or bain-marie, is the most important technique for baking creamy cheesecake. This method involves placing your cheesecake pan inside a larger roasting pan filled with hot water, which creates a humid environment and ensures gentle, even cooking. The water surrounds the pan and moderates temperature fluctuations, preventing the top from cracking while the center remains underbaked.

To set up your water bath, place your filled cheesecake pan (wrapped in foil) inside a larger roasting pan. Pour hot water into the roasting pan until it reaches about halfway up the sides of the cheesecake pan—typically 1 to 2 inches of water. Some bakers use boiling water from a kettle, while others heat water in advance. The water temperature should be hot but doesn't need to be actively boiling. Carefully transfer this setup to your oven—some bakers place the roasting pan on the oven rack first, then add hot water to minimize spillage risk.

Bake at 325°F for approximately 55 to 70 minutes, depending on your oven and pan size. The cheesecake is done when the edges are set but the center still jiggles slightly when you gently shake the pan—about a 2-inch circle in the middle should wobble. The internal temperature at the center should read around 150°F on an instant-read thermometer. Overbaking causes cracks and a dry texture; underbaking results in a runny center. This balance point differs slightly between ovens, so checking for doneness by appearance rather than relying solely on time is important.

Once baking is complete, turn off the oven and crack the door open about 4 inches. Let the cheesecake sit in the cooling oven for one hour. This gradual temperature change prevents the dramatic contraction that causes cracks. After this hour, remove the cheesecake from the oven and water bath, remove the foil, and let it
