Understanding Enchilada Basics and History

Enchiladas are a classic Mexican dish that dates back centuries. The word "enchilada" comes from the Spanish verb "enchilar," which means to season with chiles. Traditional enchiladas consist of corn or flour tortillas wrapped around a filling, then covered with a flavorful sauce and baked until heated through. The dish originated in Mexico and has become popular throughout North America, with many regional variations.

The basic structure of an enchilada remains consistent across most recipes: a tortilla serves as the wrapper, a filling provides the main ingredient (such as chicken, beef, cheese, or beans), and a sauce brings everything together with flavor and moisture. What makes enchiladas special is how the components work together. The sauce soaks into the tortilla during baking, creating a dish that's moist and flavorful throughout, rather than dry. This is different from tacos, where the filling stays somewhat separate from the shell.

Different regions of Mexico have their own enchilada traditions. In Sinaloa, enchiladas are often made with a dried chile sauce. In Oaxaca, they might feature mole sauce. In Mexico City, enchiladas verdes with green tomatillo sauce are popular. When you make enchiladas at home, you can explore any of these regional styles or create your own combination based on ingredients you prefer.

Understanding the purpose of each component helps you make better enchiladas. The tortilla needs to be pliable so it wraps without cracking. The filling should have enough moisture and seasoning to stand out. The sauce should be flavorful but not so thick that it sits on top instead of coating everything. Learning these basics gives you a foundation to work from whether you follow a specific recipe or adapt one to your tastes.

Practical takeaway: Before making enchiladas, think about which regional style interests you most and what protein or filling sounds appealing. This helps you choose the right sauce and cooking method for your version.

Selecting and Preparing Your Tortillas

The tortilla you choose affects how your enchiladas turn out. Two main options exist: corn tortillas and flour tortillas. Corn tortillas have a authentic flavor and are traditional in many regions of Mexico. They're also naturally gluten-free. Flour tortillas are softer and more pliable, which can make them easier to work with, especially if you're new to making enchiladas. Both work well, and your choice often depends on personal preference and dietary needs.

When shopping for tortillas, look for ones that are flexible and not dried out. Tortillas stored in the refrigerator stay fresh longer than those at room temperature. A package kept sealed lasts about two weeks in the fridge. If you can't find fresh tortillas at your local store, frozen tortillas work just as well. You can thaw them in the refrigerator overnight or at room temperature for a few hours.

Before you start assembling, you need to warm your tortillas. This step is important because cold tortillas crack when you try to roll them. Place tortillas in a dry skillet over medium heat for about 30 seconds per side, or stack them and wrap them in a damp towel to warm them gently. Some cooks prefer to dip corn tortillas briefly in warm sauce before rolling, which softens them and adds flavor. For flour tortillas, warming in the skillet usually works best.

You might also want to lightly brush tortillas with oil before filling them. This helps prevent them from sticking together and adds a slight richness. Use a pastry brush and olive oil or cooking oil. This step is optional but makes the process smoother. If you're making enchiladas for the first time, have your filling and sauce ready before you start warming tortillas, since they cool down quickly once removed from heat.

Practical takeaway: Buy fresh tortillas, store them properly in the fridge, and always warm them before rolling. This single step prevents cracking and makes assembly much easier.

Creating Flavorful Sauces and Fillings

The sauce is what transforms individual ingredients into a cohesive dish. Three main sauce styles appear in enchilada recipes: red sauce (made from dried red chiles or tomatoes), green sauce or salsa verde (made from tomatillos and green chiles), and cream-based sauce. Each brings different flavors. Red sauce tends to be warm and slightly earthy. Green sauce is brighter and more tangy. Cream sauces are rich and mild.

A basic red enchilada sauce starts with dried chiles. Common choices include guajillo, ancho, or New Mexico chiles. Soak them in hot water for 10 to 15 minutes to soften them, then blend them with garlic, onion, chicken or vegetable broth, and spices like cumin and oregano. You can strain this through a fine mesh for a smooth texture. This homemade sauce takes about 20 minutes to prepare and tastes significantly better than many canned versions. If you're short on time, quality canned enchilada sauce works well too.

For green sauce, tomatillos are the key ingredient. Roast fresh tomatillos under the broiler or in a hot skillet until slightly charred, then blend them with roasted green chiles, onion, garlic, and cilantro. The result is a sauce that's tangy and fresh. This also takes about 20 minutes to prepare. Some people add sour cream or crema to the finished green sauce for richness.

Fillings can be as simple or complex as you want. Shredded cooked chicken seasoned with cumin and salt is classic. Ground or shredded beef works too. For vegetarian versions, try black beans mixed with cheese and sautéed peppers, or a combination of roasted vegetables like zucchini and squash. Most fillings include cheese (usually Oaxaca, Monterey Jack, or cheddar) and sometimes sour cream or crema for richness. A filling recipe typically combines one main ingredient, cheese, and seasonings, keeping it simple so flavors don't compete.

Practical takeaway: Choose one sauce style you're most interested in and make it first. Homemade sauce takes 20 minutes but tastes noticeably better. Pair your sauce with a filling that complements it in flavor intensity.

Assembling and Layering Your Enchiladas

Assembly is where your preparation comes together. You'll need a baking dish, typically a 9-by-13-inch rectangle for a standard batch. Start by spreading a thin layer of sauce across the bottom of the dish. This prevents sticking and adds flavor to the bottom layer of enchiladas. Pour about one-quarter to one-third of your total sauce into the dish and spread it with a spoon or spatula.

Next, take a warm tortilla and place it flat on a clean work surface. If you're dipping tortillas in sauce, hold it briefly in the sauce, then lay it down. Add about 2 to 3 tablespoons of filling down the center of the tortilla. Don't overfill—this makes rolling difficult and causes filling to squeeze out the sides during baking. Roll the tortilla tightly, tucking in the sides slightly as you go, and place it seam-side down in the baking dish. The seam-side-down placement helps hold the tortilla together as it bakes.

Continue filling and rolling tortillas until you've used all of them or filled your baking dish. The enchiladas should fit snugly but not be packed so tightly that they can't expand slightly. Once all tortillas are rolled, pour the remaining sauce evenly over the top. Make sure every enchilada gets coated with sauce. This is important because the sauce keeps the top from drying out while baking. Sprinkle cheese over the top if desired—about one-half to three-quarters cup of shredded cheese works well.

At this point, you can cover the dish with foil and refrigerate it for several hours or overnight before baking. Preparing enchiladas ahead is convenient if you're planning ahead. When ready to bake, simply follow the baking instructions. If baking immediately, proceed to the oven.

Practical takeaway: Sauce on the bottom, 2-3 tablespoons of filling per tortilla, seam-
